This wine is fermented using wild yeast, which gives it a slight aroma, crisp citrus notes & lovely toasty characters.
This Semillon is from the Hunter Valley 2012 vintage, the perfect region to grow Semillon.
As the name suggests we will be using wild yeast to ferment this wine, which will give a slight fragrance of 'pong' but still have crisp citrus notes and lovely toasty characters.
